This is a unique olive oil as the olive trees that produce it exist only on Lesvos island. This very aromatic olive oil with its beautiful golden colour, which will compliment your cooking habits, triggering your taste buds with a very pleasant aftertaste. As it is light and fruity, it can be used as an all-around olive oil that will elevate and uplift the flavours of your dishes. Use it as is, in salads, marinades and dressings, in cooking or frying, or as a finishing touch. The healthiest and most aromatic fat in the world can be used instead of butter, even for baking. A spoonful of olive oil is a great way to start your day!
Three main characteristics differentiate our olive oil from other varieties:
1. The golden colour due to a lower percentage of chlorophyl
2. A delicate taste and texture
3. An intense fruity aroma due to the rich wild flora found in the traditional olive groves of Lesvos island, which are some of the oldest still existing in Greece

Lesvos island and Olive Oil

More Than Just Another Greek Island

Lesvos Island

Lesvos island in the north-eastern Aegean sea is the third largest island of Greece and the eighth largest in the Mediterranean sea. The island has approximately 400 kilometres of coastline and an amazing landscape with numerous olive groves. Lesvos has been a source of inspiration for writers, artists, musicians and philosophers from ancient times until today. In Lesvos, the arts, literature and culture have had a prominent place in the lives of people since the beginning of civilization, which is why it is also called the Island of Poets. Lesvos is the home  of a variety of PDO products, such as Ouzo, Kalloni sardines and Ladotyri cheese (a hard cheese made from sheep and goat milk preserved in olive oil). It is also the home to 11,000,000 olive trees, covering approximately 20% of Greek olive oil production. According to historical sources and finds, such as an excavated olive press dating back to 2800–2000 BC, it is believed that Lesvos has been producing olive oil since the Bronze Age. Since then and still today, Lesvos has been a renowned and integral part of the olive oil industry. The olive oil from Lesvos is unique because it is produced from different varieties of olive trees than the rest of the country. In the south mainly grows the Kolovi variety of olives, also called Mytilinia olives (the capital of Lesvos island). And to the north grows the Adramitini variety, a local variety from the Adramiti area of Asia Minor. Both varieties produce the liquid gold of the island.

Environmentally friendly and sustainable farming practices, with circular economy principles

The whole process and the methods used in the production of our olive oil, from the start to the final product, have great importance and significance to us. The use of environmentally friendly methods is non-negotiable. Our companions to this new venture, the Protoulis Master Olive Oil Makers, offered us completely ecological methods and more. Their goal is to operate their olive mills as autonomously as possible, utilising the natural by-products of the olive. The olive pit produced by the oil production is used as fuel to heat the water facilities. The leaves collected from the olive-leaf separator are partly provided free of charge to local livestock farmers to feed their livestock, and the rest are bio-degraded and reused to fertilize the olive groves. To achieve the perfect product, the harvesting is done by hand. The olives are collected in open perforated pallet boxes and transported immediately to the olive mill. There, they are stored for no longer than 24 hours before the oil extraction process starts.  State-of-the-art equipment for cold extraction pressing is used in the production. The olive oil produced is stored in stainless steel tanks in perfect conditions, insulated from heat and protected from light.
